Apples and other round things

Home made apple pie The Clement’s Apple trees are hookin up the neighborhood with fresh apple juice, apple pies for Thanksgiving, apple butter and more.  We also have an abundance of pumpkins which have made it into several soups, pumpkin butter and some simple grilled pumpkin side dishes.

Apple Butter Recipe

6 lbs peeled and quartered apples
5 cups fresh pressed apple juice
1 cinnamon stick
2 cups sugar

Pumpkin Butter

5 lbs sugar pie pumpkin, peeled and cubed
6 1/2 cups water
1 cinnamon stick
1/2 teaspoon freshly ground nutmeg
1 1/4 teaspoons ground ginger
1/2 tablespoon ground clove
2 1/2 cups sugar

Cook for 6-8 hours stirring occasionally.  Once the ingredients have reduced over half and become the consistency of baby food, pass the mixture through a food mill or sieve to remove chunks and create a smooth, shiny butter.

Place in jars and refrigerate or process for canning.
