Miss Wagar, the un-official Mayor of Redding California was down for a visit this weekend. In her honor, Jon made a three course tomato dinner that was magnificent. We dined al-fresco because we are sophisticated like that. And by the time we ate at about 10pm, it was about 90 degrees still. Yeah it’s late for dinner. We are very European 😉 We started with a bruschetta featuring Hawaiian Pineapple and Kellogg’s breakfast heirloom tomatoes. Then we had Jon’s famous watermelon, tomato and feta stacks and finished with a first time attempt at whole wheat pasta with cherry tomatoes and balsamic vinegar. It was a hit and so easy. We will make it again. Maybe he will even blog someday with the recipe.
